TERROIR:
Located on the right bank of the Tarn River, the vineyard benefits from chalky-clay soils that enhance the purity and freshness of the Chenin grape.
WINEMAKING:
The grapes are transferred by gravity into a pneumatic press to preserve their natural quality. The juice is then left to rest in tanks during a period of cold static settling. Fermentation takes place at a controlled temperature of 16–17°C. Bottling is carried out in the same year as the harvest to capture the wine’s full freshness.
TASTING NOTES:
A brilliant golden color. The nose is intensely expressive and delightful, bursting with aromas of white fruits such as apricot, pear, and peach, with a delicate hint of honey. On the palate, it is lively, refreshing, and rich in white fruit flavors, finishing with a beautiful crispness. This wine is best enjoyed young to appreciate its full aromatic potential, although it can be cellared for 5 to 6 years.
FOOD PAIRING:
Perfect as an aperitif. It pairs wonderfully with steamed fish, seafood platters, light cheeses, and cold cuts.
