What an opportunity and responsibility to be the 6th generation at this winery. Here's a brief history of our Hirissou family.

In Gaillac, the cradle of winegrowing, we have been producing wines for more than three centuries. we are deeply rooted in this land on both banks of the Tarn. 

With the birth of Pierre Hirissou in 1827, the first vines were planted. We could perhaps go back further, but ancient writings have not revealed all their secrets. It was in 1855, with the birth of his son Antoine Hirissou, that the vineyard developed considerably.

Winery owners for six generations

Our 38 hectares wine estate surrounding Gaillac, a historic town, is situated on both banks of the Tarn river. We also have two high-quality terroirs in which original grape varieties are planted.

They are Braucols and Duras for the red wines, and loin de l'Oeil, Muscadelle and Mauzac for the white wines, all traditional grape varieties that contribute to the aromatic complexity, elegance and finesse of Gaillac appellation's wines. This extraordinary combination gives our production a unique personality.

Miracle from the alliance of two terroirs

We produce the rich and fruity wines on clay-limestone soils and the fine and tannic structured wines on gravelly soils.

In respect for nature, we take the utmost care organically in working our land and growing our vines. In this way, we optimize the harvest and its quality in order to keep a constant right balance of wines at our wine cellar.

Strict control of yields, 40 to 45 hectolitres per hectare and even 25 hectolitres for the Cinto and Florentin cuvées, followed by each single plot vinification. That allows our wines to develop all their character.

Our Terroirs

The reputation of a wine is always linked to its terroir, the soil and subsoil on which the vines are planted. Our winery has the particularity to have our vines on two different terroirs of Gaillac.

Our red grape varieties plantations are located on the gravel of the left bank of the Tarn, renowned for its long-living red wines.

Our white grape varieties plantations are situated on the first hills of Gaillac at the right bank of Tarn. The soil is rich in clay-limestone from where the best white wines of Gaillac are produced.
