Dry white wine Vieilles Vignes 2021 AOC Gaillac

Production

36 hls / hectare The grapes destined for the production of this vintage are harvested from our oldest parcels of sauvignon, which limits us in the quantity of wine obtained.

Winemaking

The grapes are brought by gravity into our pneumatic press after about ten hours of pellicular maceration. The whole of this harvest will ferment in barrel and will be raised and beaten during the 8 to 9 months of its passage in barrel.

Food & wine pairing

Intense and very aromatic nose. In the mouth, we find a lot of aromas as well as a lot of fat and a very great final length. This wine can be enjoyed on cooked fish, white meat as well as goat cheeses or other powerful cheese. This wine can be enjoyed as an aperitif. Ability to age 6 to 7 years.
