Welcome in the largest producing appellation in the South West France : GAILLAC
Domaine du Moulin is managed by the 6th generation : Nicolas HIRISSOU
Located on both sides of the Tarn and surrounding the historical town of Gaillac.
Two areas, two different types of soil gives:
-Fat & fruity wines produced on clay-limestone
-Elegant & tannic wines produced on gravelly soil
The Nicola’s watchword : A respect for nature and the history of the region embodied in every bottle.
To follow a lifestyle very close to nature, the Domaine du Moulin estate is in conversion to organic.
Sparkling white wine
Hand harvested with an alcohol concentration of 11% to keep all the freshness and green apple aroma of this variety.
The fermentation is stopped in cold conditions, then, to finish the fermentation, the wine is bottled (ancestral method) without addition of liquor.
Lovely green apples aromas
To be serve very chilled, this wine will be a perfect and original aperitif. Or, to finish with a dessert like an apple crisp
100% Braucol (typical variety of Gaillac region)
Considerable work is made in the vineyard for this cuvée, Harvested by hand in wooden boxes, brought as quickly as possible to the cellar and only flawless ones are keeped. The quintessential taste of the Braucol is obtained by a very short direct contact with the grapes before an ageing in oak barrels for 12 months,
Florentin seduced a lot of sommeliers thanks to its fruitiness, finesse and length of mouth feel with the blackcurrant and spices notes. The perfect pairing for poultry and other special meals.

Masterpiece red wine
60% Tannat, 30% Syrah, 10% Braucol
Nicolas has created this masterpiece of wine with a special and secret vinification thanks to the knowledge handed down from
generation to generation.
The Cinto wine need a fermentation of 8 weeks and a maturation in French barrels for 12 months.
Vibrant purple color followed by a wide range of aromas like black raspberries, blueberries, violets and roasted herbs.
To serve at 17°C
Pairing with beef, lamb and red fruits desserts
Minimum 36 equivalent bottles per order (of which 12 bottles of Cinto)
1 Equivalent Bottle = 1 bottle 75cl (example : 1 Magnum = 2 Equivalent bottle)
